Method
Veggie ragu
- Cook onions, carrots and celery for 8-10 minutes until soft
- Add garlic and oregano, cook for 30 seconds
- Add tomato paste and cook for 1 minute
- Add chopped tomatoes, sugar, balsamic vinegar, salt and pepper, and simmer for 15-20 minutes until thick
Cheese sauce
- Melt butter in a saucepan
- Whist in flour and cook for 1 minute (do not brown)
- Slowly whisk in warm milk until smooth
- Simmer until thickened and silky
- Add cheddar, salt and pepper
Assembly
- Alternate layers starting with ragu, ending with cheese sauce
- Top with extra cheese
- Cover with foil and cook at 180°C for 30 minutes
- Uncover and cook for 12-15 minutes until golden brown
- Rest for at least 15 minutes before slicing
